Boys and their Toys
So for those who know my husband and his friends know that they love to play and they have the fun toys to play with. This weekend was no exception. Once again all the boys went up to the cabin and went snowmobiling, they had one of their friends take these cool pictures of them riding. This one is of Graham. What do you think ladies, do you think I could hang with these guys. They haven't seen my back flip into my toe-touch off the snowmobile yet. I think I could totally keep up with them!!

A very fun and busy day
Maddi was so excited to go to her first birthday party. She took a bath and then put on her robe until I was able to get her ready to go. She was so excited! She kept saying "mommy I go to Parker's Birthday?" "Oh" "lets go" she just keep saying that over and over! Thanks for the invite Nic we had a lot fun!


Poor McKay he so badly wanted to play.




Poor Parker and his crown. We were sitting at the table talking and McKay was being fussy, so I spotted this crown on the table not even thinking and gave it to McKay to play with. After a few minutes I realized that this might be Parker's Crown after McKay had riped it and basically demolished it. SO I asked Cindy who was sitting across from me if she thought this was Parker's. She said something like "Oh even if it is I don't even think he would care" Well just then Nicole walks back to the table and said something like " Oh look at Parker's crown, he loves this crown he has been wearing it every day since Tuesday." Cindy and I just started laughing, I felt so bad. But Parker didn't seem to mind!

Easter Egg Hunt
This morning Wheeler farm had its annual Easter egg hunt. Which started at nine o'clock. Maddi and I arrived literally at 9:03am I started to noticed that a lot of people were leaving, I turned around to tell Maddi that today must be our lucky day because we got such a great parking spot! Little did I know that I probably should have been there by eight. As we went to look for candies there was none we had gone everywhere on that farm and could not find anything. I was about to just go buy some candies and put in her basket when we had walked past this man and he noticed she didn't have any candies. So he came running after me and said "turn her around and I will throw some candies on the ground" So sweet!! So Maddi was able to get some candies from that sweet man! Unfortunately for her they were all the candies she did not like! Oh well. We at least tried!

What's for dinner??????
A lot of people have asked me how I make dinner every night. How I have time to spend so much time in the kitchen to make dinner. The truth is I spend about 5-10mins making dinner. I wish I could spend a lot time cooking (since I enjoy it so much) but when you have kids and things to do it is almost impossible to spend that much time in the kitchen preparing dinner!
I am going to share one of my favorite recipes that will turns into three different meals! It is so so so easy and so yummy!!! I usually take Monday's to be my prep day for other meals as well so when I make dinner everything is already done and I just have to throw everything together.
1st Meal --- Beef Roast with Vegetables
(This is easy just prepare it in the morning and it is done in the evening)
1/2 cup chopped onion
6 red potatoes, cut into cubes
1 (5-pound) boneless beef roast, trimmed of fat
Salt and ground black pepper
3 tablespoons all-purpose flour
1 (14-ounce) can diced tomatoes
1/3 cup maple syrup
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Arrange onion, potatoes, in bottom of slow cooker. Season beef all over with salt and black pepper. Rub flour all over beef. Place roast on top of vegetables in slow cooker. Whisk together tomatoes, maple syrup, chili powder, cumin, garlic powder, and onion powder. Pour mixture over beef. Cover and cook on LOW for 12 hours or on HIGH for 8 hours. Remove beef from slow cooker and shred with 2 forks. Serve 1/3 of shredded beef with this meal (and all of the vegetables) and refrigerate remaining beef for another use.
Meal 2 --Beef Empanadas
(this one is one of my favorite favorite meals) You just use the left over beef!!
2 (9-inch) refrigerated pie crusts
2 cups cooked shredded beef
1 cup shredded Monterey jack cheese
1 (4-ounce) can diced green chiles
Preheat oven to 425 degrees F.
Unroll pie crusts onto a flat surface. Top each quadrant of crust with 1/2 cup of beef, 1/4 cup of cheese and about a tablespoon of chiles, making even layers and spreading ingredients to within 1/2-inch of the edges. Top with second pie crust. Using a pastry cutter or sharp knife, make an X across the circle, making 4 equal sections. Pinch around the edges with a fork to seal. Transfer empanadas to a baking sheet and make small slits in the top of each one to allow steam to escape during cooking. Bake 8 to 10 minutes, until crust is golden brown.
3rd Meal -Asian Beef Salad
1 tablespoon sesame seeds
4 cups chopped Romaine lettuce
2 cups cooked shredded beef
1/2 cup shredded carrots
2 scallions, chopped
1/4 cup chopped fresh cilantro leaves
1/2 cup reduced-sodium chicken broth
1 tablespoon rice wine vinegar
2 teaspoons sesame oil
Salt and pepper
Place sesame seeds in a small skillet and set pan over medium-low heat. Cook 1 to 3 minutes, until just golden brown, shaking the pan frequently to prevent burning. Remove from heat and set aside.
Place lettuce in a large bowl (or divide onto individual dishes). Top lettuce with beef, carrots, scallions and cilantro.
In a small bowl, whisk together broth, vinegar and sesame oil. Season with salt and pepper, to taste. Pour mixture over salad, and top with toasted sesame seeds. Serve immediately.
This is what I do for most of my meals-- I usually just bake a big batch of whatever meat I am using that week and try to use the left overs in different meals!

Fend for yourself
Maddi and McKay generally wake up between 6:30-7:00am. I think that is just way too earlier too start the day. Usually I will get up turn on some cartoons and go back to bed until Maddi comes and gets me a half hour later and tell me she wants breakfast. Luckily for me McKay doesn't need my help with that, he found himself some animal crackers for breakfast! Now only if he could teach Maddi. Life would be heaven.

Happy Birthday Kerri
Thursday was Kerri's 30th birthday. We surprised her by going to Good thing Utah, although she had figured it out on our way there. I haven't ever really watched the show but it was really fun to see it in action! Tiff was also there and that was fun to see her. She will be co-hosting Good things Utah on March 24th. I am so excited for her and think she will be awesome. 

I have known Kerri for 13 years now. She is an amazing friend and was such a fun room mate. I love being with her. She always makes me laugh and we have such a good time together. She is such a positive person and has always been such a good influence in my life! I am so grateful to have her as one of my best friends. I love ya and I hope you had a very happy 30th birthday!!

So my super sweet friend Tiffany took these pictures of my kids one afternoon. She did such an amazing job with them especially considering that they both hadn't nap and were pretty tired. I couldn't figure out how to load the CD in the computer. I am not very smart when it comes to things like that. But Tiff was nice enough to email some to me so I could put them on by blog!!

NATIONALS
This last weekend I was able to go and judge Nationals with Trista, Heather and Jeannette. We had so much fun. I was so excited to see that Trista and I were able to share a room together. We Had a blast together as you can see all of our silly pictures. This is us in our hotel room. This was at the end of the day. We were both so tired and in such a giggly mood. We started the competition so early in the morning and ended so late in the evening with a very short break through out the day. I am feeling the effects of my tiredness today, I wish I could just sleep all day. 

On Sunday morning we totally got lost to the airport. We went almost an hour in the wrong direction. Trista and I thought it was pretty funny, however I dont think the other girls thought it was as funny as we did. Our plane was suppose to leave at Nine thirty and we arrived at the airport a little after ten, we found out that it was delayed and wouldn't leave till 10:35am. I didn't think we would make it. The lines were so long and it was already 10:30 when we were going thru security, however Kasie was totally optimistic about making our plane but I was planning on getting some breakfast taking my time to the gate. We thought we would try anyway. To our surprised we actually made it. Unfortunately for Tris and I we hadn't eaten anything all day and was starving.

Texas
Our first day, I was sick in Texas my sister,mom, and dad all took care of my kids. McKay and my sister and my nephew Aron.


The next day we went to the Alamo and the river walk. I know my sister looks a whole shade darker than me but that is because is such beautiful olive skin. My mom always tells me that fair skinned is so beautiful too. "Aw.... thanks mom."

Sea World!
I took Maddi to see the dolphins. They really are so beautiful. If only I could have one as a pet. I would swim with it every day!


What's Sea World with out a few shows. My kids really loved watching the different shows.



I think it is so amazing how they are able to train these animals or whatever you would say for things that live in the sea.

So I dont think I am as daring as I use to be. I was seriously scared for dear life and then was mad at Graham for making me go on this ride!

This ride is the one on water, the first time I went I didnt get hardley anthing at all, however my mom got drenched, but then I went with graham and.....

I got soaked!
I hope this doesn't gross any one out, but I just wanted everyone to know what I had to go through at Sea World and the whole week, but McKay had thrown up three times at Sea World, luckily for me I had a change of clothes, but the stroller smelt so bad. We had to take it apart when we got home and throw everything in the washer.
